This Pear Upside-Down Cake recipe combines luscious caramelized pears with a soft and moist cake. Perfect for a sweet snack or for brunch. Enjoy it with your favorite hot drink.

Chef Tosca Tip

For an extra burst of flavor and texture, consider adding a handful of chopped nuts, such as walnuts or pecans, to the batter before baking. The nutty crunch will complement the soft texture of the cake and the caramelized pears.

Ingredients

Caramelized Pears Ingredients:

  • 3 pears
  • 3 tbsp sugar
  • Pinch of coarse salt
  • Cinnamon

For the cake

Dry Ingredients:

  • 200g flour
  • 100g brown sugar
  • 6g baking powder
  • 3g cinnamon (adjust to taste)
  • Pinch of salt

Wet Ingredients:

  • 50g vegan butter (melted) or oil
  • 200g pear compote (you can also use apple)
  • 80g plant milk
  • 10g apple cider vinegar (or regular vinegar)

method

  1. Preheat the oven to 200°C
  2. Peel and slice the pears into 6 equal lengthwise slices
  3. In a pan on medium to high heat, add the sugar and let it caramelize gently by stirring occasionally. Add the sliced pears, a pinch of coarse salt, and half a teaspoon of cinnamon. Turn the pear slices gently while they caramelize. If the preparation is a little dry, you can add a bit of oat milk. Let it simmer for about 7 minutes or until the pears are golden
  4. Line a cake mold with baking paper and place the caramelized pears at the bottom
  5. Combine the wet ingredients in one bowl and the dry ingredients in another
  6. Pour the wet ingredients into the dry ingredients and combine with a whisk until the mixture is smooth
  7. Pour the batter into the mold with the pears and bake for 50 minutes at 200°C, or until the top is golden brown
  8. Check with a knife or toothpick for doneness
  9. Allow the cake to cool for at least 30 minutes before eating
  10. Turn the cake onto a plate to unmold it and enjoy!
