This lemon cake recipe is great for any occasion. The bright flavor of the zest and juice gives this cake a tangy, sweet, and bold flavor. The addition of apple sauce keeps this cake super moist and fluffy, making it perfect for digging into any time of the day.

Chef Tosca Tip

Be sure to zest the lemons before juicing them. It will be much easier to zest a firm lemon.

Ingredients

Dry Ingredients:

  • 200g all-purpose flour
  • 100g brown sugar
  • 10g baking powder

Wet Ingredients:

  • 200g apple sauce (compote)
  • Juice from 2 lemons (80g)
  • 50g olive oil
  • Lemon zest from 2 lemons (10g)

method

  1. Preheat oven at 180°C
  2. Combine wet ingredients in a bowl and dry ingredients in another bowl
  3. Pour wet ingredients in dry ingredients and combine with a whisk until smooth
  4. Pour batter in mold and bake for 50min at 180°C, or until golden/brown on top
  5. Let the cake sit for at least 30min before eating
