You will love it!

These jam-filled cookies will satisfy your sweet tooth anytime you are craving something sweet. The buttery dough creates a shortbread-style cookie that is simple in the best way. Jam sits between the two cookies to create a sandwich cookie, which is perfect with a warm cup of tea.

Chef Tosca Tip

Less is more when it comes to adding the jam. Too much jam and it will fall out of the sides from the cookie.

Ingredients

  • 200 g all-purpose flour
  • 100 g vegan butter. Room temperature.
  • 40g unsweetened apple sauce
  • 30g warm water
  • 75g brown sugar
  • 1 large pinch of salt
  • Your favourite jam, for this recipe I used homemade prune jam but you can also use chocolate spread

method

  1. In a large bowl, mix the flour, sugar, cubed vegan butter, apple sauce and salt.
  2. Knead with your hands until the dough starts to clump together. Add water gradually as you knead.
  3. Transfer to a working surface and continue kneading until a smooth dough forms.
  4. Flatten dough into a thick disc, cover and refrigerate for 30 minutes.
  5. Preheat oven to 200°C
  6. Roll out dough evenly on a floured surface, about half a cm thick and cut out the cookies making sure you have as many bottom as top parts
  7. Bake for 10 to 12 minutes or until lightly golden
  8. Cool off, add your favourite jam to the center and close the cookies on both sides
  9. Enjoy and share with your friends and family
