Calling all artichoke lovers! This pasta is made for you. The creamy and silky sauce is made by blending artichoke hearts with the preserved oil from the artichokes. The addition of fresh basil and lemon adds a bright and bold flavor to the finished dish

Chef Tosca Tip

Slowly add in the water, as this will either thicken or loosen the sauce.

Ingredients

  • 170g preserved artichoke hearts (from a jar)
  • 15g oil from the preserved artichokes or just regular olive oil
  • 30g fresh basil
  • 10g lemon juice
  • 100g to 130g water (add gradually and test for consistency)
  • 30g almond or cashew butter
  • Salt to taste

Optional:

  • 20g nutritional yeast

method

  1. Blend all ingredients until smooth
  2. Add to your favorite pasta
  3. Top with pepper, lemon zest and roasted hazelnuts (optional)
