Easy Vegan Lemon Cake

Light, zingy, moist and spongey — this cake will fulfil your lemon cake cravings. Plus, it’s really easy to make. Impress on Sunday brunch or afternoon tea and bake this foolproof lemon cake!

Serving: 7-8 people

Utensils: 20cmø cake mold

Prep time: 10 minutes

Cooking time: 50 minutes

Total time: 1 hour


Dry Ingredients:

  • 200g all-purpose flour

  • 100g brown sugar

  • 10g baking powder

Wet Ingredients:

  • 200g apple sauce (compote)

  • Juice from 2 lemons, (80g)

  • 50g olive oil

  • Lemon zest from 2 lemons (10g)


  1. Preheat oven at 180°C

  2. Combine wet ingredients in a bowl and dry ingredients in another bowl

  3. Pour wet ingredients in dry ingredients and combine with a whisk until smooth

  4. Pour batter in mold and bake for 50min at 180°C, or until golden/brown on top

  5. Let the cake sit for at least 30min before eating


Preferably use organic lemons for this recipe
